WATER CHERRY DELIGHT*

Method:
Cut cherries into small pieces. Cover with water, add sugar to sweeten. Add few drops of cochineal. Boil till tender. Thicken with cornflour. Pour into wet mould and chill. Serve with cream, ice-cream or custard.

*Editor's note: 'water cherry' is a common name that could apply to several different members of the Syzygium genus: S. aqueum, S. jambos, S. malaccense.
