½ cup butter or margarine
1 cup sugar
1 cup mashed ripe bananas
½ cup buttermilk or yogurt
1 tsp vanilla
2¼ cups flour
1 tsp baking powder
1 tsp baking soda
½ cup grated coconut
½ cup brown sugar
1 tsp cinnamon
½ tsp grated ginger.
Grease and flour a 9-inch tube pan.
Cream butter and sugar, beat in eggs one at a time. Add banana, milk or yogurt, and vanilla.
Mix dry ingredients of cake together, then blend into banana mixture.
Put half of the batter into a greased and floured 9-inch tube pan.
Combine the topping ingredients together, and sprinkle half over the cake mixture in the pan.
Put remaining batter into pan and sprinkle remaining topping on top.
Bake in 350°F oven about 50 minutes.
