Ingredients:
¾ cup dried apricots
¾ cup shredded coconut
1 Tbl grated orange rind
1 Tbl grated lemon rind
1 Tbl orange juice
Method:
Wash dried apricots, cover with boiling water and let stand 5 minutes. Drain.
Put apricots and coconut through food processor. Add orange juice and grated rinds. Knead until blended.
If needed, add more orange juice. If too moist, add a small amount of confectioners sugar. Shape in 1-inch balls and roll in additional grated coconut, sugar or finely chopped nuts. Makes 24 balls.
