COCONUT CUSTARD BREAD PUDDING

Ingredients:
6 slices white bread, buttered and crusts removed
4 eggs, beaten
1 litre milk
¼ cup sugar
1 tsp vanilla
⅛ tsp nutmeg

Method:
Cut crusts from 6 slices of white bread and butter one side and place in oiled rectangular baking dish.

Stir the remaining ingredients together until sugar is dissolved and pour into the baking dish. Sprinkle each slice of bread liberally with grated coconut on buttered side and place on egg mixture. Place baking dish in pan of hot water and bake in 350ºF oven for 45-50 minutes or until firm.

About 6 portions.
