1 cup flour
1 tsp baking powder
¼ tsp baking soda
1 cup brown sugar
1/3 cup oil or melted margarine
1 tsp vanilla
2/3 cup chunky-style peanut butter
½ cup fresh, shredded coconut
Mix dry ingredients in a bowl, set aside. Beat 3 eggs in separate bowl. Mix in brown sugar and margarine, vanilla and peanut butter. Stir into dry ingredients with the coconut and mix well.
Spread in lightly-greased 9 x 13 inch pan and bake in 350ºF oven for 25-30 minutes. Cool and cut into bars.
