PEACH PALM AND SALMON PATTIES

Ingredients:
15 or so boiled Peach Palm fruits
1 medium-sized can salmon or tuna
½ cup breadcrumbs + extra for coating
2 eggs
1 large onion, finely diced
Chopped parsley, chives, or your choice of herbs, e.g. cumin, coriander
1 Tbl tomato or chilli sauce
Dash of soy sauce and salt and pepper to taste.

Method:
Make crumbs of the cooked fruits by crushing between fingers and thumbs, or use a food processor. Add all other ingredients and mix well.

Form into patties 13 mm thick, coat with breadcrumbs and fry in a little oil until patties are golden brown. Serve with a hot sauce of your choice.
