STIR-FRIED VEGETABLES WITH PEACH PALMS

Ingredients:
Peach palm fruits
6 different vegetables, cut up
cooked rice
tahini

Method:
Stir-fry peach palm fruits. Set aside.

Stir-fry 6 vegetables in a wok in a coating of oil: for example, onions, broccoli, capsicum, beans, zucchini, sweet potato, Chinese cabbage, etc.

When vegetables are a bright green color, throw in a cup of water and clamp on the lid. Cook till vegies are tender, add herbs and garlic to taste and a little tahini to thicken. Toss in stir-fried peach palm fruits. Serve with rice (to which has been added some pandan leaves for flavouring) and a peanut or satay sauce.
