BRAZILIAN PAPAYA CASSEROLE

Ingredients:
6 cups cooked, diced green papaya
1 cup grated coconut
1 cup orange juice
2 tsp grated orange rind
4 eggs, beaten
¼ cup sugar
1 cup milk
salt and pepper

Method:
Combine papaya, coconut, orange juice and orange rind in a large bowl, add sugar, eggs, milk, salt and pepper.

Combine thoroughly and pour into a greased casserole. Bake 45 min. in 325ºF oven until mixture is slightly firm.
