Ingredients:
A 1kg (approx) green pawpaw
1 large onion
Fresh or dried thyme
1 Tbl oil
salt and pepper
Fresh lemon or lime juice
Chilli (optional)
Method:
Peel pawpaw, discard seeds and wash thoroughly. Grate pawpaw. Slice onions. Put grated pawpaw and sliced onions in bowl, add 1 level dessertpoon salt and cover with cold water. Let stand for 10-15 mins.
Drain, rinse, squeeze dry.
Heat oil on moderate heat. Add chilli, thyme and pawpaw and cook, stirring for about 10-12 mins. Switch off heat. Add salt and pepper and lemon juice to taste.
Note: Freshly grated green pawpaw can be frozen. To use, defrost, wash, squeeze and cook.
