4 cups cooked chicken
4 shallots, chopped
1 cm ginger
¼ cup french salad dressing
1½ cups cubed papaw
2 radishes sliced
Cut the chicken into bite-sized pieces and place in a mixing bowl.
Combine the chicken, papaw, shallots and radishes.
Finely grate the ginger and add to the french salad dressing.
Combine well. Arrange the lettuce leaves to form a cup shape in small bowls. Pile the chicken and papaw mixture into lettuce cups and garnish with almonds.
