PERSIMMON BREAD

Ingredients:
2 eggs
¾ cup sugar
½ cup oil
1 cup persimmon pulp
1 tsp soda
1½ cup sifted flour
1 tsp cinnamon
½ cup chopped walnuts
½ cup chopped raisins (optional)

Method:
Preheat oven. Blend eggs, sugar and oil together. Mix soda into pulp. Add to sugar mixture.

Sift flour before measuring. Add cinnamon and salt to measured flour. Add coarsely chopped nuts to dry ingredients and fold into persimmon mixture.

Pour mixture into oiled 3x4x9 inch loaf pan. Bake 325ºF for 1 hour 15 minutes.

Serves 2.
