PERSIMMON CAKE

Ingredients:
¾ cup sugar
3 Tbl butter or margarine
1 beaten egg
3 tsp baking powder
1¾ cups flour
½ cup milk
¾ cup persimmon pulp
confectioners' sugar (optional)

Method:
Cream sugar and butter (or margarine). Add egg.

Sift together baking powder and flour (or use S.R. flour) and add to the creamed mixture alternately with milk.

Add persimmon pulp.

Line a pan with waxed paper and bake at 350° F for approximately 50 minutes until done.

Makes one 8" layer. Confectioners' sugar may be sprinkled over top.
