PINEAPPLE AND JAKFRUIT SLICE

Ingredients:
1. Pastry
½ cup butter
¼ cup sugar
1 Tbl corn flour
1 egg yolk
1 cup plain flour
A squeeze of lemon juice

2. First filling
2 cups milk
1 Tbl sugar
1 Tbl coconut
2 Tbl cornflour
1 tsp vanilla

3. Second filling
1 pineapple
1 cup finely diced jakfruit pulp
sugar
2 Tbl cornflour

Method:
1. Cut the butter and sugar together, then mix remaining ingredients in to a crumb texture. Press into a lamington tray and bake.

2. Boil milk with sugar and coconut. Dissolve cornflour in a little water and stir into boiling mix. When cooled a little, add vanilla. Pour onto pastry and cool.

3. Process or blend pulp of pineapple, diced jakfruit, add a little sugar to taste. Bring to boil, thicken with cornflour, pour onto milk base, sprinkle well with toasted coconut. Chill.
