PINEAPPLE MUSTARD PICKLE

Ingredients:
½ cup pineapple, diced
450 g sugar
80 ml white wine vinegar
25 g dry mustard
125 ml water

Method:
Combine the sugar and water and cook until the sugar is completely dissolved.

Add the fruit and cook over moderate heat for 15 minutes.

Remove from heat and put into a bowl.

Simmer the vinegar over low heat and stir in the mustard powder.

Cool, and then add it to the fruit mixture.
