SOURSOP CAKE I

Ingredients:

Cake:
1 cup blended soursop
2 Tbl butter
¼ cup honey
2 Tbl yoghurt (natural)
2 eggs
1 to 2 cups wholemeal self-raising flour

Frosting:
½ cup blended soursop
1 Tbl butter
1 Tbl honey
non-instant skim milk powder

Method:
Make cake: Blend butter and honey, add soursop, yoghurt and eggs, blend thoroughly. Add flour till right consistency for cake (depending on juiciness of soursop).

Bake 50 minutes at 350°F.

Make icing: Blend butter and honey, add soursop, then skim-milk powder a tablespoon at a time, until thick and creamy.

Spread over cake and decorate with fresh fruit.
