8-10 tamarinds
2 cups hot water
3 tsp finely-grated fresh ginger
2 tsp ground cummin
¼ tsp garam masala
sugar to taste
pinch of chilli powder (optional)

Shell the tamarinds and put in a bowl. Pour boiling water over them and stir. Stand until cold.

Stir well and strain through a fine sieve.

Add the remaining ingredients, stir well and strain again. Chill.

Add iced water at serving time, to desired consistancy.

For a simple drink, pour boiling water over shelled tamarinds, cool, strain and add sugar to taste.
