TAMARIND AND GINGER HONEY SNAPS

Ingredients:
3 cups whole meal SR flour
¾ cup raw sugar
¼ tsp baking powder
½ cup butter
8 Tbl honey
4 tsp tamarind pulp
4 tsp (grated) fresh ginger

Method:
Put flour and baking powder into a bowl, rub in half the butter and sugar.

Into a saucepan, put honey, grated ginger, tamarind pulp, and rest of the butter. Heat until all melted and runny, stirring well to get the flavour of tamarind and ginger into the mixture. Pour into flour mixture, make into a stiff dough.

Break off pieces and roll into small balls, place on greased biscuit trays, flatten with a fork. Cook for 15 minutes at 350ºF in the middle of the oven until brown.
