1 kg taro peeled and chopped into cubes
2 Tbl oil
3 tsp curry powder
1 medium onion, finely chopped
4-5 cloves garlic, minced
2 tsp ginger, finely chopped
2 cups water
1 Tbl coconut milk powder
2 Tbl cornflour

Put the taro in a casserole dish.

Fry the oil, onion, garlic ginger and curry powder in pan for 5 minutes, add to taro and cook in casserole dish for ½ hour in moderate oven.

In saucepan (or microwave) cook the water, coconut milk powder and cornflour until thick.

Add 1 cup cheese and stir until melted. Pour over the taro and curry.

Mix the sauce through the taro well and heat for 5 minutes.
