1½ cups cooked, mashed taro
1 egg white
2 Tbl plain flour
½ tsp salt
¾ cup milk, scalded and cooled to lukewarm
3 Tbl cream
1 Tbl baking powder
Beat together the taro, eggs, egg white and cream.
Add flour, baking powder and salt, then add the milk a little at a time, beating constantly.
Heat a frying pan and brush with melted butter. Spoon the batter into 5cm rounds and cook pancakes for about 30 second on one side, turn and cook until golden brown.
