Ingredients:
1 medium-size chicken
250 g okra
2 cups chopped onions
salt/black pepper to taste
¼ teaspoon ginger
2 cloves garlic
1 fresh tomato, pureed
2 red capsicums
Method:
Cut and wash chicken. Place in saucepan and put in 1½ cups chopped onions, black pepper, ginger and garlic.
Simmer until meat is tender. Add the tomato and capsicums. Allow to boil for 5 minutes.
Slice okra very finely and add to soup along with the remaining ½ cup chopped onions. Cook for 10 minutes.
Serve with Fufu.
