WHITE SAPOTE BREAD

Ingredients:
1¾ cups flour sifted
2 eggs
1 cup mashed sapote
2¾ tsp baking powder
2/3 cup sugar
½ tsp salt
1/3 cup shortening

Method:
Sift together flour, baking powder and salt.

Beat shortening in mixing bowl until creamy. Add sugar and eggs. Continue beating on medium speed 1 minute.

Add white sapote to egg mixture, mix until blended.

Add flour mixture, beating at low speed for 30 seconds, do not overbeat.

Turn into greased loaf pan and bake in moderate oven for about one hour.
