BARBADOS CHERRIES STEWED

Ingredients:
500 g cherries
100 g sugar
1 piece of cinnamon
lemon juice or half a teaspoon of citric acid.

Method:
Remove stems and wash the cherries. Pour water over the cherries to just cover them. Bring to the boil quickly and remove from the heat immediately. Keep the saucepan covered until the contents has cooled.

Strain and retain the cherries and juice. Combine an equal volume of sugar with the juice, add the cinnamon and boil until it thickens. Add the cherries and turn off heat. Keep saucepan covered until the contents has cooled. Add lemon juice or citric acid. Serve chilled.
