BARBADOS CHERRY BUTTER

Ingredients:
4 eggs
¾ cup sugar
¼ cup lemon/lime juice
4 ozs butter
1½ cups barbados cherry pulp

Method:
Combine eggs and add sugar. Add lime juice and barbados cherry pulp. Heat this mixture together with chopped butter over double boiler. Stir until thick. Pour into hot, sterilized jars and seal.
