8 - 10 ackee pods
2 Tbl cooking fat
2 tsp lime/lemon juice
1 Tbl minced herbs
½ tsp. salt
3 Tbl water or stock
Tomato for garnish.

Remove edible portion of ackee from pods, wash and blanch, drain. Chop into small pieces.

Heat fat, saute herbs and ackee. Add liquids, salt and lime juice. Stir frequently until liquid is evaporated and ackee is soft.

Serve on a hot dish garnished with tomato pieces.

N.B. When fully grown, Ackee burst open like flowers, to expose the edible portion inside. ONLY THEN MAY THEY BE EATEN. They are delicious to eat, but they must have split open before cooking, otherwise they are not safe to eat. Discard any damaged parts.
