AVOCADO AND MACADAMIA NUT SOUP

Ingredients:
1 large ripe avocado
1 clove garlic
300 mls milk
300 mls chicken stock
½ cup ground macadamia nuts
150 mls sour-lite cream

Method:
Peel avocado and cut into small pieces. Place in blender with garlic, milk, chicken stock and seasoning.

When smooth add macadamia nuts and blend further.

Pour into saucepan and heat - do not boil.

Stir in sour-lite cream just before serving. (May also be served chilled)
