1¼ cups S.R. Flour
1½ tsp mixed spice
½ tsp bicarb. of soda
1½ cups castor sugar
125 g butter
2 eggs
¼ cup raislns
1 large avocado (mashed)
½ cup buttermilk
½ cup chopped walnuts

Preheat oven to 185ºC. Grease and flour a 21-cm cake tin. Sift the flour, spices and bicarb soda together and set aside. Cream sugar and butter together until light and fluffy, add eggs and avocado and beat a few seconds. Add buttermilk, fruit and nuts and mix well. Fold in flour mixture.

Spread mixture into cake tin, level top and bake 50-55 minutes or until cake tester comes out clean. Cool before serving.
