3 avocados
2 mandarins
maraschino cherries
15ml brandy
1 tsp Curacao
250ml apricot puree
shredded almonds
2 bananas
whipped cream

Cut avocados in halves lengthwise. Remove seeds and flesh without damaging the shells. Peel mandarins, remove all pith and divide into segments.

Cube bananas and avocados, steep with sugar, brandy and curacao and chill.

Blend together with apricot puree and fill avocado shells. Pipe with whipped cream. Decorate with cherries and sprinkle with almonds or macadamia nuts.
