2 tsp butter
1 tsp flour
l½ cups milk
6 cups chicken stock (use cubes)
salt and pepper
cream or sour cream
Cream butter and flour together until quite smooth, then stir in the milk slowly and cook until thickened, stirring constantly.
Add stock and keep hot. Mash avocados until smooth and add to the mixture, but don't allow to boil.
Adjust seasoning and strain before serving. Put a dollop of whipped cream or sour cream on top of each serving.
