HOT CURRY-FILLED AVOCADO

Ingredients:
2 Tbl butter or margarine
1 Tbl curry powder
1 tsp salt, optional
1 tomato, peeled, seeded and chopped
1 onion, fine minced
2 Tbl lime or lemon juice
1 cup cooked prawns or canned shrimp
1 cup sour cream or thick yoghurt

Method:
Melt butter in a saucepan and stir in curry powder (and salt). Add chopped tomato and onion, cook until soft.

Add lemon or lime juice, prawns, sour cream or yoghurt. Heat thoroughly.

Cut avocados in half, remove seeds and skin. Fill centres and top with hot mixture.

Makes 6 - 8 serves.
