GUACAMOLE (DIP)

Ingredients:
2 avocados
salt and pepper to taste
½ medium onion, minced or chopped finely
1 Tbl lemon juice
½ green chilli, seeded and finely chopped (optional)
1 very ripe tomato, peeled

Method:
Beat first 5 ingredients together with electric mixer on medium speed until smooth (or put into blender).

Chop tomato finely with knife and fold into mixture. Chill.

Serve as a dip with potato chips, carrot and celery sticks, cucumber sticks. Especially good with corn chips. (usually obtainable at health food shops)
