1 lb diced beef, shrimp or pork (cook the pork first)
1 Tbl oil
2 cloves crushed garlic
1 medium onion, diced
1 Banana bud
3 Tbl vinegar
Salt, pepper and soy sauce to taste.

In a wok, stir fry the meat with one Tbl of oil, 2 cloves of crushed garlic and a diced medium-sized onion. Stir until the garlic is browned.

Dice a banana blossom head, put in a bowl of salted water and knead for 1 minute to remove the bitter sap. Wear rubber gloves or the blossom's purple colour will stain your hands. Squeeze the blossom head, put in the wok with the meat and stir fry for 5 minutes. Add 3 tablespoons of vinegar and season to taste with salt, pepper and soy sauce. Let cook without stirring for 5 minutes.

The recipe yields about 6 servings. For those of you who always end up with more bananas than you can eat, the above is a good idea.
