LOW CHOLESTEROL BANANA AND GINGER PUDDING

Ingredients:
375 g mashed banana
20 g finely chopped ginger or preserved ginger
½ cup currants
3 egg whites
½ cup honey
½ to ¾ cup water
1 tsp vanilla
¾ cup olive oil
2 cups wholemeal self-raising flour

Method:
Put banana, ginger, and currants into a bowl

Beat egg whites in another dish, add water, honey and oil and vanilla.

Pour into banana mixture and add SR flour gradually. Stir in well.

Cook 45 mins. at 300°F.

Serve with skim milk ice cream.

NB. Half-ripe bananas give a much better flavour. Two servings.
