BANANA AND PAWPAW CAKE

Ingredients:
1½ cups SR flour
1 cup chopped pawpaw
4 oz. low fat cottage cheese
4 egg whites
2 large mashed bananas
2 Tbl honey
1 tsp vanilla

Method:
Blend cottage cheese and pawpaw until smooth, add one egg white at a time, add vanilla and banana, and fold in sifted flour.

Gently spoon mixture into an 8" cake tin. Bake at 350ºF or 175ºC for 45 minutes.
