BANANA PUDDING

Ingredients:
12 ripe bananas
1 cup grated raw cassava
Water

Method:
Peel and slice the bananas, put them in a pot, cover with water, and bring to the boil. Cook 20-30 minutes, then mash thoroughly.

Add grated cassava, sprinkling in a little at a time and stirring often. Cook until mixture thickens (about 3 minutes).

Serve plain, with milk or cream, or with coconut cream (see recipe).
