½ cup butter or margarine
1 cup sugar
2 eggs
2 mashed ripe bananas
1 cup plain flour
1 Tbl cornflour
¾ tsp bicarbonate soda powder

In a bowl, cream together the butter or margerine with the sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas.

Sift the flour, cornflour and bicarb soda together. Add to banana mixture, stirring until blended. Pour into a 23 cm (9") square pan.

Bake at 180ºC (350ºF) 30-35 minutes. Cut into squares. Serve warm with butter or whipped cream and fruit. Makes 8 serves.
