PLANTAIN FRITTERS

Ingredients:
3 small green plantains
2 Tbl sugar
¾ tsp baking powder
oil for frying
1 Tbl cinnamon

Method:
Peel plantains and cut into 2-inch rounds. Boil them in salted water for about 30 minutes, or until tender. Remove, drain and mash well.

Add the sugar and baking powder and mix and shape into patties 1½ inches across. Fry in smoking hot oil until golden brown. Remove, drain and sprinkle with cinnamon.
