PLANTAIN JAM

Ingredients:
6 cups diced plantain (ripe)
4 cups sugar
Juice and grated rind of one lemon
¼-inch piece of green ginger, finely-chopped

Method:
Place all ingredients in a large saucepan. Leave to stand for at least one hour.

Put saucepan on stove and bring to the boil. Cook at a steady temperature for about one hour.

Pour into hot, sterilised jars and seal.
