KEV'S BLACK SAPOTE ROCK CAKES

Ingredients:
1½ cups plain flour
1½ cups SR flour
1 cup coconut
1 cup sugar
8 Tbl butter
1 cup mixed dried fruit
Rind of 1 lemon - grated
½ cup peanuts
flesh of 1 black sapote
2 eggs
½ cup milk

Method:
Mix the flours, coconut, sugar, mixed fruit, lemon rind, butter and peanuts until the mixture is like breadcrumbs.

Then add the eggs, milk and black sapote.

Mix again and place spoonfuls onto a greased tray and bake at 250°F for 15 to 30 minutes.
