2 cups firmly packed brown sugar
125 gr butter or margarine
½ teaspoon bicarb. soda
½ cup sour milk
½ cup mashed black sapote
1 cup S.R. flour
1 cup plain flour
2 teaspoons mixed spice
1 egg (beaten)

Mix together sugar, flours and spice.

Add butter and rub in until mixture resembles crumbs.

Press half mixture into a greased 23 cm (9") square tin.

Dissolve the bicarb. soda in the sour milk, stir in the black sapote and beaten egg.

Beat the mixture into remaining half of the crumb mixture and pour over base.

Bake in a moderate oven 40-45 minutes. Leave for 5-10 minutes in tin, then carefully turn out. Serve with ice cream if desired.
