CHOCOLATE CHIP BLACK SAPOTE CAKE

Ingredients:
1 cup cooking oil
2 cups white sugar
2 eggs
1 tsp vanilla
1 tsp bi carb soda
2 tsp baking powder
2 Tbl cocoa
2 cups S.R. flour
2 cups black sapote puree ,
½ cup chocolate chips

Method:
Preheat oven to 180°C. Puree black sapote.

Cream oil and sugar, beat in eggs and vanilla.

Combine dry ingredients and add to mixture, fold in sapote to resemble a rich chocolate batter. Add chocolate chips.

Pour into well-greased tins.

Makes 3 loaf-tin-size loaves.

Bake for 55 minutes.
