BREADFRUIT AND COCONUT PUDDING

Ingredients:
3 cups ripe breadfruit
1 cup boiling water
½ cup sugar
1 coconut (grated)

Method:
Pour the water over the coconut and stand for 15 min. Then squeeze through a cloth.

Pour the coconut milk into the breadfruit with sugar. Mix and pour into a buttered pie dish.

Bake at 350°F for 1 hour.
