1 cup boiled mature breadfruit
1 egg, beaten
¼ cup skimmed milk powder
1 Tbl capsicum, chopped (optional)
saIt, to taste
1 Tbl onion, finely chopped
2 Tbl water
Oil for frying

Mash breadfruit well with a fork. Make sure to get rid of the lumps. Add beaten egg and milk power. Stir well. Mix in onion, salt, and capsicum. Add just enough water so the mixture will drop off a spoon.

Fry in hot fat, until golden brown. Serve. Makes 12 fritters.
