STUFFED BREADFRUIT

Method:
Peel and parboil a whole breadfruit in salted water until soft but still firm.

Cut off the stalk end and hollow out the middle. Stuff this with any meat and herb mixture (meat must be browned first in the frying pan), or an onion, cheese and nut filling.

Put the top back on and bake in a moderate oven for 45 minutes.
