CARAMBOLA AND GINGER SLICE

Ingredients:
¾ lb (340 g) diced carambolas
1 egg
4 oz honey or sugar
1 Tbl fresh diced ginger
8 oz Wholemeal S/R flour
4 oz butter or margarine
¼ cup milk

Method:
Sift flour into bowl, rub in butter, add honey or sugar, then the carambolas. Beat egg and milk, then add to first mixture.

Bake in a greased slice tin in moderate oven for 30 minutes. Cut into squares.
