CARAMBOLA UPSIDE DOWN CAKE

Ingredients:
2 large carambolas
¼ cup sugar
2 eggs
1½ cups SR flour
chinese five spice
golden syrup
¼ cup butter/marg cooking spray

Method:
Spray cake tin with cooking spray.

Slice one carambola into medium slices and place in bottom of tin.

Spoon golden syrup over carambola. This is to your taste.

Puree other carambola and set aside.

Cream butter and sugar until no sugar can be felt, then add eggs and five spice and mix well.

Add the pureed carambola to the mix and then add the flour, a quarter cup at a time (you may not need all the flour).

Pour over the carambola slices and syrup and bake in 200°C oven for approx 20 mins.
