4 cups grated cassava
2 cups coconut milk/cream
2 Tbl melted butter
1½ cups sugar
1 tsp salt
¼ cup pure coconut cream
Grated cheese or strips cottage cheese
Beat eggs, add sugar, butter and salt.
Mix thoroughly. Add the grated cassava and the coconut milk.
Mix well. Pour in to 2 round tins limed with grease-proof paper or wilted banana leaf.
Bake until almost done. Brush the top with coconut cream and sprinkle with the grated cheese or strips of cottage cheese.
If desired, brown the top under the griller, or top with coconut cream/milk with sugar to taste and brown under griller.
