BUNCHOSIA AND CUMQUAT JAM

Ingredients:
Bunchosia fruits
cumquats
lemon juice
sugar
[Editor's note: quantities are not specified - your discretion.]

Method:
Bunchosia must be almost ripe. When fruit turns a little red, pick quantity of fruit, wash clean. Remove stems, cover with cold water.

Bring to the boil and cook fruit until soft and mushy. Cool.

Pass through a sieve. To every cup of cooled cumquats add juice of half lemon.

Now to every cup of mixed cooked fruit add 1 cup sugar and cook over moderate heat until liquid gels.

Pour into hot, sterilized jars and seal.
