CITRUS PIE

Ingredients:
4 eggs
125g butter
½ cup plain flour
¾ cup castor sugar
1 cup coconut
2 cups milk
Finely grated rind of 1 lime/lemon
Finely grated rind of 1 orange
1 Tbl lime/lemon juice
1 Tbl orange juice

Method:
Process or blend all ingredients until combined.

Pour into a greased 23cm pie dish and cook in a moderate oven until set when tested with a knife blade.

Allow to stand for 10 minutes before serving.
