skins of two large pummelos (cut into one-inch slices, or cubed after removing outside skin)
4 lbs white sugar
4 cups water
2 tsp vanilla essence.

Lightly peel outside skin of pummelos.

In a large saucepan boil water, put in pummelos to boil. When soft, drain and press out water.

To make syrup - boil 4 cups water, add 6 cups white sugar. Let boil for ½ hour, add vanilla essence, add pummelo skin. Keep checking that it doesn't dry or burn.

Line a flat dish with greaseproof paper. In another dish put white sugar. When pummelo is ready, add 2 pieces at a time in the sugar - roll and sprinkle until pieces are well-coated with sugar.

Put in the sun to dry for a few days, turn over at intervals to dry on other side. Store in airtight containers.
