LEMON ALLSPICE MUFFINS

Ingredients:
2 cups all purpose flour
2 tsp baking powder
½ cup sugar
1½ tsp. allspice
1 Tbl grated lemon peel
1 large egg, lightly beaten
2/3 cup milk
1/3 cup fresh lemon juice
¼ cup unsalted butter, melted

Method:
Preheat oven to 400°F. Line muffin pan with paper cups. Sift dry ingredients into mixing bowl. Add lemon peel and mix well.

In small bowl, combine beaten egg with the milk, lemon juice and melted butter.

Add liquid ingredients to dry ingredients all at once, mixing only until moistened.

Fill muffin cups 2/3 full. Bake 20 to 25 minutes
